That's right. When you place an order from Steaks of St. Louis, we don't fill it with stock. Our butcher examines your order and hand selects cuts to your specifications. After cutting your steaks, we hand trim them to ensure that you are getting the highest quality possible. Your Cuts are Seasoned to Order

Your Cuts are Vacuum Sealed
Each cut of meat that you order from Steaks of St. Louis is individually packaged in its own vacuum sealed packaging. This removes oxygen from the packaging and protects the meat from potential exposure to bacteria. After being oxygen sealed, your steak will change color from pink to brownish. However, once it is exposed to air again, the pink color will be restored. We take the utmost care in our packaging, to ensure that your steaks are as fresh as they can possibly be when they arrive to you.

Your Steaks are Frozen Overnight
Once the steaks have been prepared and sealed, we freeze them immediately to prepare them for shipment the very next day. Shipping your steaks frozen is an extension of our commitment to freshness. We guarantee that when your steak is thawed and removed from its package, it is of the same high quality standards that it was when we cut it for you.

Your Order is Boxed
After your steaks have been cut, prepared, vacuum sealed, and frozen, they are inspected for quality assurance, wrapped in black foil paper, and boxed with the Steaks of St. Louis seal of quality.

The Box is Placed in the Cooler
Each Steaks of St. Louis order is shipped in its own individual, reusable cooler. We lay the box in the bottom, and cover it with a bag of dry ice. Our thick foam coolers ensure that your steaks will be protected from the elements. After sealing the lid, your order is sealed and boxed for shipping.

Your Order is Shipped from our Facility
